Vegetable Quesadillas

I started liking it since I had in my  sisters house, so I learned this recipe from her. Finely chopped vegetables with cheese makes its healthier for the kids and  tasty too. I’m sending this recipe to Sandwich mela and A.W.E.D - Mexican

Ingredients:
Bell peppers – 1/4 cup
Zucchini = 1/4 cup
Mushrooms – 10 no's
Onions – 1/4 cup
Cilantro – few
Salt – to taste
Chili powder – to taste
Grated Cheese – 1 cup
Tortillas – 15

Procedure:
Place one tortilla on the Quesadilla  maker(a pan will work too) and spread the vegetables mixture on it as a medium layer. Then spread one layer of cheese and place  another tortilla on top of it. Close the tortilla lid. When its ready remove form quesadilla maker and slice along the mark to make about 6 wedges and serve hot with guacamole and salsa. If making in a pan place one tortilla on the pan then spread the vegetable  mixture and cheese. Place another tortilla on top of it. After a while flip it over to the other side and allow the cheese to melt completely and then remove from the pan. Slice into wedges and serve.
